In 1908, a chemist at Tokyo Imperial University asked a deceptively simple question over a bowl of his wife's kombu broth: why does this taste so satisfying when it is neither sweet, salty, sour nor bitter? Kikunae Ikeda isolated the answer — glutamate — named the sensation umami, and gave science its fifth taste. He had also, incidentally, explained all of Japanese cuisine.

Dashi: the five-minute masterpiece

Dashi is the base of nearly everything — soups, simmered dishes, the seasoning logic of kaiseki — and unlike Western stocks that simmer for hours, classic ichiban dashi takes minutes:

  1. Kombu — dried kelp, steeped warm and never hard-boiled (bitterness lives past the boil) — contributes glutamate.
  2. Katsuobushi — bonito smoked and ripened with mold into wood-hard blocks, shaved to petals — contributes inosinate.

It is not so much a stock as a precision extraction of umami compounds — which is why it can be this fast.

The synergy trick

Here is the engineering marvel: glutamate and inosinate multiply each other. When both compound classes hit the tongue together, perceived umami amplifies several-fold beyond their sum — a synergy confirmed by taste science and exploited empirically by Japanese cooks centuries before anyone could name it. This is why proper dashi tastes vastly deeper than kelp water or fish flakes alone, and why a transparent soup can carry a whole course.

Umami without borders

Glutamate is not Japanese — parmesan, tomatoes, cured ham and mushrooms are all umami bombs, which is why those foods feel so complete. What Japan did uniquely was build a cuisine that leads with umami instead of fat: no butter, little oil, restraint everywhere — with depth outsourced to dashi and the fermented pantry. Is umami the same as MSG?

MSG is pure monosodium glutamate — the sodium salt of the same glutamate that occurs naturally in kombu, tomatoes, parmesan and cured ham. Ikeda patented its production a year after naming umami, founding Ajinomoto. Chemically the glutamate is identical; major scientific reviews have found MSG safe at normal culinary doses. Fine Japanese cooking simply prefers to build glutamate through dashi, fermentation and ingredient choice rather than the shaker.
