Takaoka is the sushi counter that made Chiba a destination in its own
right rather than a suburb of Tokyo’s sushi map. Chiharu Takaoka, a
Chiba native, trained for eight years at a Ginza sushi house before
opening here on 8 October 2013, and built his reputation on a
stubborn idea: that nearly everything on the counter should come
from his home prefecture. Fish arrives directly from fishermen at
Futtsu, Choshi and Funabashi; the rice is grown for him on contracted
paddies in Chiba and cooked with Chiba spring water; the sake list is
Chiba too. In March 2023 he took the counter to Tokyo Midtown Yaesu
under the name Chiba Takaoka, where it earned a Tabelog Sushi TOKYO
Hyakumeiten selection in 2025 — and then, in spring 2025, he brought
it back to Chiba City, a few streets from the original site. Tabelog
gave the Chiba house its Award Silver in 2021 and Bronze in 2026.
What you eat
A single omakase at ¥30,000 including tax, with no service charge —
around two dozen courses running from small plates into nigiri.
Diners single out the horse mackerel (aji), which the master serves in
every season, the cuttlefish (sumi‑ika), and a clam dashi
chawanmushi; a television sushi programme built an episode around his
hamaguri clam and his shari. The exception to the all‑Chiba rule is
sea urchin, which comes from Akkeshi in Hokkaido. The house does not
publish a menu; the course follows what the boats bring in.
The booking reality
This is one of the easier fine sushi counters in the Kanto region to
actually secure, and the reason is structural. The ¥30,000 omakase
is listed for online booking on both Ikyu and TableCheck
(TableCheck adds a non‑refundable ¥390 per person; phone bookings earn
no Ikyu points), and the house also takes reservations by
telephone in Japanese on 043‑306‑6269. There is no release day.
Until a few years ago this was a redial‑hundreds‑of‑times house that opened
each date one month ahead, and older articles still say so; that lore
is out of date. Diners in 2026 report booking a Friday two months out
with seats to spare, and a Saturday with a month’s notice.
The rules that matter: six seats, dinner only, closed Mondays and
Thursdays. Children are not admitted. Cancellation is 100% from
two days before the reservation, and a party unreachable 30 minutes
after its time may be treated as a no‑show. Solo diners have booked
without difficulty; there is no dress code. If you would rather not
