Sushi Murase is in Nishi‑Azabu, five minutes on foot from Roppongi Station. Its chef came up through the Sushisho school, and he built the counter around aging: fish rested until its umami concentrates, set on rice whose seasoning — salt, red vinegar and rice vinegar — he adjusts each day to the condition of the fish. Tabelog gave it a Bronze in The Tabelog Award every year from 2017 to 2020, and named it to its Sushi Tokyo Hyakumeiten in 2025.
What you eat
Omakase only, decided by the day’s purchase and by how each fish has aged. TableCheck describes about twenty‑five items, alternating between small dishes and nigiri, at ¥33,000 with tax, plus a 10% service charge. The point of aging is depth rather than snap — the house’s own description is Edomae sushi with its umami concentrated.
The booking reality
This is one of the few counters at this level you can book online in English. TableCheck and Pocket Concierge, both linked from the official site, take parties of two to four, and TableCheck asks for a card to hold the seat; Tabelog books too. Parties of five or more must phone (03‑3479‑5240, in Japanese). There is no release day, and with fourteen counter seats, an eight‑seat private room and a later second turn, a week or two ahead is usually enough. The house rules, stated on TableCheck: no strong perfume or scents; if you are thirty minutes late and cannot be reached, the booking may be cancelled; children are welcome but seated away from the counter — ask ahead about a children’s menu. Closed Mondays.
