Ordinary seats cannot be reserved: write your name on the list at the door on the day and take the time slot given (the morning list opens around 10:00; weekends run two to three hours). Only the private-room kaiseki course (four or more) is booked by phone, three days ahead.

Founded 1873; hitsumabushi is the house's registered trademark (¥4,950; ¥6,600 for the 1.5-portion ichihan). Ordinary seats cannot be booked: staff take your name and party size at the door on the day, give no numbered tickets, and quote an estimated time when the wait is long.
