For years the honest advice about sushi in Nagoya was to eat it
somewhere else. Sushi Hanakuruma changed that in November 2022, when
a basement counter opened two minutes from Nagoya Station under the
supervision of Yuichi Arai, the master of Sushi Arai in Ginza. The
premise is straightforward: Edomae technique applied to fish from
Mikawa Bay and Ise Bay on Aichi’s own coast, plus the Sea of Japan,
served to eight guests at a time. Tabelog put the house on its Sushi
East 100 list in 2025. What makes it useful to a traveler is less the
pedigree than the shape of the operation — three fixed seatings a
day, a listing on English‑language Pocket Concierge, and a phone line
that still takes a booking.
What you eat
Two courses. At lunch, a nigiri course of fifteen pieces with a
roll and a bowl of soup, ¥22,000; at dinner, the omakase at
¥34,100, tsumami first and then nigiri. Both prices include tax and
there is no service charge. Diners describe a red‑vinegar shari and a
run of tsumami — uni, kombu‑cured white fish — before the nigiri;
a 2026 diner’s dinner for two came to roughly ¥90,000 with drinks.
The house asks that allergies be raised when booking, and that you
come without strong perfume or hair product. Children are admitted
only from junior‑high age and only if they take the full course.
The booking reality
There is no lottery, and the calendar is unusually visible. The house
lists its telephone (052‑433‑5855) and takes online bookings
through OMAKASE, Ikyu, Gurunavi, PayPay Gourmet and Pocket Concierge
— the last in English, which is rare outside Tokyo. OMAKASE opens
the following month on the 1st at 15:00 JST (on 11 September 2026
it was accepting dates through 31 October, with 1 October at 15:00
set for the next release), charges ¥390 a seat and sets no limit on
how often you may book; Ikyu was still showing open 18:00 and 20:30
seats inside the same month. Every service is a
single seating: 12:00 at lunch, 18:00 and 20:30 at dinner, and the
house asks that you arrive on time. Wednesdays are closed. Reviewers
call it “relatively easy to book” for a counter of this standard;
one found a seat four days ahead through OMAKASE in late 2025.
If you prefer a human confirmation — the counter for a particular
seating, an allergy note, a party of three at one sitting — our desk
calls the house in Japanese and books directly. On the platforms
cancellation is 50 percent from seven days out and 100 percent from
three, and a change of party size on the day is charged in full; Ikyu
takes bookings from a single guest and asks overseas guests to give
their hotel’s name and number. No wine may be brought in.
