For years the honest advice about sushi in Nagoya was to eat it on the way somewhere else. Sushi Hanakuruma changed that in November 2022, when a basement counter opened two minutes from Nagoya Station under the supervision of Yuichi Arai, the master of Sushi Arai in Ginza. What makes it useful to a traveler is less the pedigree than the shape of the operation: three fixed seatings a day, a listing on English‑language Pocket Concierge, and a book that — unlike Arai’s own in Ginza — actually opens.
What the house is
Eight seats at a single counter in the basement of a Meieki office building, exit 5 of Nagoya Station and connected to the Unimall underground arcade. The premise is Edomae technique applied to fish from Mikawa Bay and Ise Bay on Aichi’s own coast, plus the Sea of Japan, over red‑vinegar shari. Tabelog put the house on its Sushi EAST 100 list in 2025. Every service is a single simultaneous seating — lunch at 12:00, dinner at 18:00 and again at 20:30 — and the house asks for punctuality: arrive late and, Ikyu warns, part of the course may not be served. Wednesdays are closed, with occasional irregular closures on top.
How the book opens
There is no lottery and no introduction. The house lists five online doors and a telephone, and each behaves a little differently.
- OMAKASE (omakase.in) releases the following month on the 1st at 15:00 JST — on 11 September 2026 the calendar ran to 31 October with 1 October at 15:00 set for the next drop. A registered account and card are needed, and the platform adds ¥390 per seat.
- Ikyu shows live inventory rather than a monthly drop, takes bookings from one guest, and asks overseas guests to enter their hotel’s name and telephone number in the comment field. On 11 September 2026 it still had 18:00 and 20:30 seats open inside September.
- Pocket Concierge lists the house in English — rare outside Tokyo — with prepaid seats when they are released.
- Gurunavi and PayPay Gourmet carry the same Japanese inventory as Ikyu.
- Phone: 052‑433‑5855, in Japanese; the house does not publish hours for the reservation line, and phone bookings earn no Ikyu points.
“Bookable” here means it. Diners on Tabelog describe the house as “relatively easy to reserve” for its level, and one reported a seat four days out through OMAKASE in November 2025. The exceptions are predictable: Saturday lunch and the 18:00 dinner disappear first, and the 20:30 seating is the one that survives.
How to book it yourself
- A month or two out: open the Ikyu listing and Pocket Concierge and look at what is already open. If your date shows, take it — you do not need to wait for a release.
- If your month is not yet open: set an alarm for 15:00 JST on the 1st of the preceding month and refresh the OMAKASE page. That is 01:00 in New York and 06:00 in London in winter, an hour later in summer; Japan has no daylight saving. Our note on how OMAKASE works covers the account and card setup.
- Choose the seating deliberately. The 20:30 dinner is the same omakase as the 18:00 and is the easiest to land; the 12:00 lunch is a shorter, nigiri‑led course at a lower price.
- Declare allergies at booking. Ikyu states that restrictions affecting two or more dishes are treated as a cancellation, subject to the cancellation fee depending on when they are raised.
- Watch the last week. Cancellations under the 50%/100% terms below tend to surface three to seven days out, and Ikyu shows them without notice.
Prices and rules
- Lunch: nigiri course of fifteen pieces with a roll and a bowl of soup, ¥22,000. Dinner: omakase, tsumami then nigiri, ¥34,100. Both prices include tax; there is no service charge. Drinks are extra; a diner’s dinner for two in 2026 came to roughly ¥90,000 with sake.
- Cards accepted (Visa, Mastercard, JCB, Amex, Diners); no e‑money or QR payment.
- Cancellation on Ikyu: 50% from 00:00 seven days before, 100% from 00:00 three days before, 100% on the day whether or not you call. OMAKASE and Pocket Concierge state their own terms at checkout; read them once and put the deadline in your calendar.
- House rules: children of junior‑high age and up only, and only on the adult course; no strong perfume or hair product; the whole room is non‑smoking; no bring‑your‑own.
