Farm-to-table French on the Budoonomori estate north of Kanazawa, in a building by architect Shigeru Ban; chef Marco Santoscoy. Seasonal course of about 13 items ¥20,000 including tax plus 10% service.

Release timing not published. Request bookings on the official website for one to four guests (confirmed by email from the staff), or by phone 10:00-11:30 and 15:00-17:30 (required for five or more). As of 18 October 2026 the web form's calendar ran to 30 December 2026.

Exceptions and seasons

Lunch from 12:00 (last entry 13:00) and dinner from 18:00 (last entry 19:00); closed Wednesdays, though it may open on some Wednesdays and does open when Wednesday is a public holiday.
