Classic edomae craft: fish aged and cured to its moment, red-vinegar shari, a progression that builds rather than parades. The counter seats a handful of guests per service, and the chef works within arm's reach.
What "allocation" means for you
When the public calendars show no availability — the night you land, the one evening between Kyoto and your flight home — we can still open the counter to you. Guaranteed confirmation, in writing, in English, usually within hours. This is the difference between a concierge that asks restaurants and one that answers for them.
