How the book opens
Phone only, two guests minimum. The official site says bookings open two months ahead, but in 2026 each month opened with a news post about three months out: October on 1 July, November on 2 August, December (to 31 Dec) on 4 September. January 2027 not yet announced as of 18 October 2026.
Exceptions and seasons
Dinner only; entry 18:30 and all guests start together. Lunch possible on request (dinner menu). Irregular closures; business days on the official calendar. No regular service on 8 November 2026 (annual event with Cave de Bamboo).

From abroad, either call at those hours or have a Japanese speaker call for you.
